2020 Day 5 "12 Days of Cocktails" Cocktail Winner

- 1 ½ oz Brown Butter Fat Washed American Dry Gin*
- ½ oz Pine Clove simple syrup**
- ½ oz Fresh Lemon Juice
- 3 dashes angostura bitters
- Seltzer to top
- Smoked Sugar pine*** and lemon twist to garnish
Directions: Light the end of sugared pine*** on fire and cover with coupe glass for 30s. Add all ingredients except the seltzer into a mixing glass with ice and stir well.
Strain into the coupe glass over ice. Top with the seltzer.
Garnish with a lemon twist and the smoked sugared pine sprig.
*Brown Butted Fat Washed American Dry Gin: 30 g Unsalted Butter * 1 750 ml bottle American Dry Gin -In a pan cook butter on low until brown. -Pour the butter into Gin and infuse for 1 hour shaking every 10 minutes. -Freeze for 5 hours then strain.
**Pine Clove Simple Syrup: In a medium pot add 1/4 cup roughly chopped conifer tips and 5 whole cloves to 1 cup boiling water and 1 cup granulated sugar. Stir until sugar dissolves, remove heat and let cool for 30 minutes. Strain into a sealable container and refrigerate.
***Set pine aside in granulated sugar and allow to dry
