2017 "12 Days of Cocktails" Grand Prize Cocktail Winner

- 1.5 oz Conniption gin (recommend Conniption American Dry but works well with Conniption Navy Strength Gin too!)
- 1 oz plu-thyme simple syrup
- 2 oz Prosecco
- Garnish: candied thyme
Shake gin and simple syrup with ice. Strain into a flute. Top with prosecco. Garnish.
Candied Thyme: To make candied sprigs, dip whole sprigs in simple syrup and then toss with granulated sugar. Let dry for at least thirty minutes before using as a garnish.
Plu-Thyme Simple Syrup
- If plums are in season: Add 2 ripe plums (remove pit and smash to release flavors), 3 sprigs of fresh thyme to 1 cup granulated sugar and 2 cups water. Simmer over medium heat to ensure sugar is dissolved. Cool on stove top. Strain and chill.
- If plums are not in season: Add 1 cup of plum puree (taste for sweetness level), 3 sprigs of fresh thyme to 2 cups of water. Depending on how much added sugar is in puree, adjust sugar from 1/4 - 1/2 cup. Simmer, cool and strain, as above.
